Castle Sol is a horribly unbalanced even for its place in the game, if I can go through Moghwyn's Dynasty Ruins with a not too much trouble if I play carefully and keep my cool; why the ♥♥♥♥ is the next optional end-game area such an insane skyrocket in difficulty where I can't even have a moment to read the enemies moves because they either teleport out of sight behind me, or they just move/chain attacks so fast and frequently I can only get one hit on them for every 20 they can swing at me. Not to mention the one dude that just MAGICALLY knows I'm sneaking up on him and pulls a literal "teleports behind you nothing personelle kid" ♥♥♥♥♥♥♥♥ that people only joke about pulling. You don't ACTUALLY follow through with that bit, morons.
How is that, in any sense of the word, fun?

Geez, it's just a bunch of basic soldier type enemies and a couple of avoidable hazards. As for Malenia, pick one of several strategies to deal with waterfowl and just dodge the rest of her attacks.

You're just gonna ignore the part that a lot of the space you fight on is narrow ass tree branches?

The Haligtree is where this games identity crisis hits its peak, From Soft tried to fuse Sekiro and Dark Souls together thoughtlessly and it is the most apparent there.

There definitely is an uptick in difficulty from that area onward and I honestly feel that end game is a bit unbalanced.

Having said that I didn't find that castle too difficult , but it was more challenging than the dungeons that had come before.

The boss is a pain in the ass though, not because he is overly difficult but because of his stupid adds.

Good luck. The final boss for that whole mountain top area is a real jump in difficulty from what came before so good luck with him too.

Try to stay calm and carry on.

Okay here's some actual advice on dealing with both Haligtree and Sol: don't fight everything. Just run past 90% of the enemies to reach your goal, there's nothing worth picking up with very few exceptions. You don't need to fight any of the knights in castle sol, just click the bonfires, drop the lift shortcut, then head into the boss.
