I love the weird juxtaposition of opinions within the Souls Community, where beating the game with ashes, certain ash of wars, summon etc. means you didnt actually beat the game, but when there is cheese you somehow "outsmarted the game"

I dont even think Gargoyles have to be cheesed. The whole game can be cheesed by a few easy steps:
Get an early and good somber weapon.
Get the stats to use it.
Run around the world and try to get the easiest Somber Stones.

Upgrade go brrr.
Beat ass.
For even easier access:
Use Mimic Tear

There are a couple of spots in the back of their arena, one where you can snipe them quite risk free from higher ground, and another smaller platform where you can maneuver and they have pretty hard time reaching you.
