What is considered Early/Mid/Late game?
I have been fully addicted to this game. Started on Thursday already at 32 hours. Just wondering the above.

early is probably everything before atlus and mid game is everything before you unlock the mountaintops of the giants.

Some things you missed in early game:
The boss in Castle Morne in the south of Weeping Peninsula. Have you explored the whole Weeping Peninsula? That's an early game area.
I would also count the first part of Siofra to early game ( Siofra River, boss Ancestor Spirit)

Well there's no exact rating, so obviously opinions on this are going to differ. I generally filter by enemy stats and overall difficulty in said region, as well as upgrade material level found commonly in that area. It more or less goes like this:

Early game_
- Limegrave and east limegrave
- Weeping peninsula
- Liurnia of the lakes and north Liurnia
- Siofra river well

Mid-game_
- Caelid south and east
- Atlas Plateua
- Mt Gelmir top and bottom
- Ainsel river well (debatably can be considered early game)
- Leyndell the Royal Capital
- Nokron the Eternal City
- Deeproot Depths
- Nokstella, despite the material found there

Late-game_
- North Caelid (solely due to boss levels)
- Mountaintop of Giants
- Faraam Azula
- Consecrated snowfield
- Haligtree vicinity
- Mohgwyn Palace

Didn't include shunning grounds because I've never been there.

I killed one of the bosses in Siofra. Giant Knight thing. I also activated the Deep Well and explored that area. I've lit 5/8 of the torches so far.
Castle Morne did not even know there way a boss there lol.

I just killed General Radahn but I'll progress whatever side-quests I've unlocked before I go to Nokron or to ascend Dectus' Lift.

I figured Caelid would have been considered a later part of the game. I'm about lvl 50, just got out of Stormveil Castle and just start Lake area. Explored some in Caelid and I was just getting roasted. Found this ruin with these two Pumpkin Head dudes. I think I've died to them thirty times now. I just can't kill them.

Wait what how are you Level 50 after only just finishing Stormveil Castle...
I am already at the Gates of Lyndell and I am only Level 65...

I think this is a pretty accurate description. I'd put the Shunning Grounds in lategame tbh; the Omen are a massive step up from even the Altus variant, and in general it's an incredibly hard level imo.

yes, shunning ground are lategame no doubt, omens are really tough, they act like mini-bosses and never stop their combo, lobsters in depths on this location has a ridiculous health pool and damage

A lazy way of figuring this out could be to chop up this list of 28 or so zones into each 50 levels.

Level 1-50 zones = early
Level 50-100 zones = mid
Level 100-150 zones = late

I am already at the Gates of Lyndell and I am only Level 65...
On certain playthroughs where I explored the early game really well and used all my inventory golden runes, I'm level 40 when I reach Margit and level 50 when I reach Godrick. Can't help it. That's just from doing everything and never dying.

On subsequent playthrough I basically can't use golden runes because of over-leveled I become. That knocks down the levels by maybe 5-10.

Now, I end up buying all the shops just to stay in my 20s through Stormveil.

My rating is mostly due to upgrade material found there, as well as the main boss Radahn (since he's not late game, but beating him is necessary to access Nokron, another mid-game area). Caelid may seem brutal, but that's honestly due to all the nasty surprises and the oppressive atmosphere the whole place gives off.
