Pick up flame of the redmanes from the invisible scarab outside fort gael and nothing will be challenging until you run into Mohg.
I have not played many games similar to this but I enjoy the feeling of being able to take a hit and not die, and the feeling of being able to hit an enemy once and do tons of damage to them (even if I need to recharge it or something). Other than that I like melee. But idk what I am good at.

You're going to want to raise Vigor and Endurance(Health and Stamina respectively.)
There are some awesome Great and Ultra Great(AKA Colossal) weapons in this game.
If it's your blind run, you should definitely explore every area as much as possible so you don't miss anything.
Also, try everything out. You can't know what weapons you like using, or what kind of magic you prefer to throw around without testing it for yourself.
For a first playthrough I recommend always to get a Greatsword ( Claymore), a Hammer type weapon ( Morningstar) per ex. to use against miners and a Katana with bleed buildup ( Uchigatana). This 3 weapons you can get in the first area.
And yes, when you like some big hard hitting weapon, Zweihander and Greatsword are a good choice.
Good phisical damage what makes this weapon viable against every boss. Bleed is always a nice bonus.

You will want to have a ranged (Bow or Crossbow) on hand for those tough pulls or utility shots. Stick with Heater Shields (100% Physical Damage Mitigation) until you have reason for a different option. Fight 2H whenever you can (vastly increased damage). Carry a Torch.
*** Practice fighting (starting with easy mobs) not using stealth or shield. Just your weapon, movement and dodge roll. When one type of enemy becomes easy, move on to a harder one. This sort of practice will make you good. There is no 'Sneaking' up on Bosses and Blocking is many times not effective due to attack frequency or type. ***
Good Hunting
Try everything, but Golden Halberd is right there at the beginning.
you can just level up vigor and endurance once you have the minimun requirements for the weapon (15 dex 15 str aprox)
You can find 2 of them quite early in the game.
And even all around, wooden club is very very great weapon.
For roleplayers you can use very first Longsword, its awesome weapon too. And sword is also superior weapon to hunt fleshy giants.
Short spear is awesome ambush weapon.
Grab the bloodhound's fang. ridiculous damage for how early you can get it.
