Seedbed Curse what does this mean?
The location of these Seedbed curses make it appear as if these men's genitals were mutilated. Why Miyazaki?

In Japanese folklore there is something called a Shirikodama, which is basically a ball that contains a person's soul. This ball is located in the lower intestines, or anus.

Going off this, the name Dung Eater takes on a slightly different meaning. The fact that the wounds on his victims are around the stomach and pelvis region, and that he 'prevents their souls from returning to the Erdtree' gives a possible clue into what he's doing.

Lastly, the Seedbed Curse is very clearly the Omen Curse. How the Dung Eater is cultivating this curse in others is unknown, but one theory is that he is replacing their Shirikodama with pieces of Omen flesh, almost in a grafting process similar to Godrick. All speculation, but this is what made sense to me.
*reading this while eating*
I mean his name is "dung eater" so going based off of what Toad said, he's eating their soul and replacing it with Omen flesh, so that an Omen gets born instead the next cycle around.

Which also does imply that Omens are soulless monsters.

Alternatively he's infecting their souls with some kind of filth that turns them into omen's on the next cycle instead. Not sure if that's any better.

What do you think the "seedbed" in "seedbed curse" meant?

The Dung Eater sure isn't a gardener, at least in the traditional sense.
