If you mean something else, then I don't know, not with the context of the post at least.
I'd personally recommend Confessor due to the better armor and overall well rounded stats compared to Prophet, but if you want a fireball spell from the start and a higher faith stat you could always go for Prophet.
All of that can be done with one hand.
You can do with magic more than any illiterate L2 spammer with a katana.....so if you want to grasp perfection you are going to get here and now one of the best staffs/seals to cast right hand and another one to give a juicy +10% damage bonus to certain schools.
Also you can get two magma swords +10. Because it looks ****ing awesome.
The Confessor starting class has a great weapon (broadsword) to start out with and a good mix of STR, DEX, and Faith.
You'll be looking for fire incantations (pyromancies) like Flame Sling and WHIRL, O FLAME, along with weapon buffs like Blackflame blade or Blood flame Blade.
You can also use Lightning incantations like Honed Bolt, Lightning Spear, Frozen Lightning Spear.
Along with Faith comes one of the best buff spells in the game called Golden Vow. It gives you a 30% damage buff and reduces damage taken.
You'll want to use a seal in your offhand and since you're doing Faith/STR I'd recommend the Clawmark Seal as it scales with both of those.
What I'm getting from this is that you'd like to cast spells without the need to equip something to your left hand, correct? From the little I remember of Skyrim, that's how you cast spells there as a warrior sorcerer or whatever the hell, right?
There might be an item or another in ER that makes it look like your left had is free, but overall, you'll always be holding something to cast spells. It might be as noticeable as a staff or as discreet as a charm. There are plenty of spells (sorcery, incantations, etc.) that serve to buff your weapons, and I'd say even a few that fit your description of a "small fireball." However, they're all spread out across the different types of magic, which span three attributes: intelligence, faith, and arcane. Moreover, you'll need strength and dexterity to equip most melee weapons, with those three magic-based attributes being required for a few others.
Simply put, you have to specialize a little more than in Skyrim. Though it's possible to build for multiple types of magic at once, the process is a little tedious within one playthrough due to how leveling up works in FromSoftware's soulslike games, not to mention that would limit your range around mid-game.
I've only played with sorcery so far, but I remember in Dark Souls, some piromancy spells fit the fireball bill (in fact, I think there was a spell by that name). That branch of magic also gave you access to some nice buff spells. As for Elden Ring... There might be something akin to a fireball (if you change your mind on staffs, there are some bullet-like spells), there are plenty of buffs, not that many magic shield spells (the only one I know of would required a staff and some points in intelligence), but all in all, there isn't a Skyrim-like build that's just like what you described. You can work towards something like that, but Elden Ring's magic just isn't at all like TES's magic. It's something you need to keep in mind.
However instead of STR, I'm going DEX for weapon atk because desc says, dex also reduces spell casting time which will be incredible for my build. Assuming that includes finger seal spells not only staff spells.

Confessor is the worst optimized class in the game, so I can’t recommend that.
There is a talisman you can get that also reduces cast speed.
Both of which affect cast time.
