(Spoilers) For Endings: Is there a point of no return?

I haven't beaten the game yet, but I feel like I'm closing in on the end.
I've pretty much uncovered the entire map (including the bit that you need the special medallion for -- though I haven't explored much of the Consecrated Snowfields yet).

I've done all of Ranni's quest and met with Shabriri(?) who is inhabiting that Samurai's body.

I have explored the sewers below Leyndell and found a big door behind Mohg where Melina warned me against the flames.


If it's possible, with backing up my save file, I'd like to hit all of the endings in one go for their achievements.
I've only just defeated the Fire Giant in my game (using Wing of Astel -- it was pretty fun!) but did not proceed any further.

Is it very easy to determine what ending you're going to get? Or do you have to go way out of your way for all of them?
Where should I create my main "backup" save?

If I'm not wrong, you can back up even after you defeat the final boss. You will only be asked to choose what endings until then. You only need to make sure you have every ending ready before you fight the final boss.

You choose the ending at the end, the one and only exception is the Frenzy Flame ending, in which when you meet the requirements for it, youre hard lock into that ending unless you go out of your way to undo it.

For the Frenzied ending, I left the very last bit (going naked into the room and getting Fingered) till the very end. The very end is right after the final boss. That's when I save scummed. This way I got almost all endings (I didn't fancy the Dung Eater ending).

As spoiler light as possible.... You need to complete Millicent's quest if you decide to go to the door under Mohg's Cathedral. If you haven't started her quest then save the door under the cathedral for the last thing you do after Crumbling Farum Azula (you can still access the Well after that) Before entering the Erd Tree. The point of no return will be before entering that door. Quests you need to do before going through the Forge: Dung Eater, Gold Mask, Ranni, and Fia. The Frenzied Flame can be done after defeating the final boss, but before choosing an ending. All the endings are available once those quests are completed and you will choose which to do. If you inherit the flame (and have no way to cleanse it) then you have no choice on the ending. Once an ending is entered, it is stuck, so SAVE before choosing the ending, or going to the door below Mohg.
