If you have a fast weapon, every single thing he does is punishable (although a few require you to position right, like the one where he jumps into the air and dives at you requires you to be kind of far away and dodge backwards). You can even hit him in the middle of several combos.
If you have a greatweapon, not all of his attacks are punishable, but you can bait out his punishable attacks. In particular you can bait out the shield bash by just hitting his shield. I think pretty much all the combos that are longer than 2 hits are punishable (although sometimes he does that dive attack after a combo in his second phase, and that can be hard to punish, and a few of his combos get an extra hit in his last phase so you have to wait for that tail smash).
Also, the medallion that shortens casting time does not apply for dragon abilities. just sorceries and incantations
1. parry them, they are super easy to parry and im someone who avoids parrying with a passion
2. out dps them, staggering is rare but hit and run tactics always win
3. collapse on the ground and give up
any strike weapon would be superior against armor and scales. in my case i killed the crucible knight with the uchigatana with no problem whatsoever, get a small shield, parry, win.
No wonder that never worked lol.

Yes, I probably needed 5 healing flasks and 4 magic flasks with +7 refill. Definitely needed to have 3 great magic arrows flanking me during the whole fight.
My strategy with the 2v1 was actually to kill once first, before using an ash summon.
It's easier to control the boss movements and predict them when it's only you, and the ash summon dies so quickly anyways.
Kill the shieldless one first and then use the ash to bait/distract the remaining one.
I think that's the first one I ever fought. I shamelessly cheesed him before killing Godwyn. He can't walk into the narrow section you use to walk in his area lmao
