Is parrying worth it?
I mean, if you can reliably parry of course it is worth it, but that's the thing. I'm not finding the game hard at all so far with the exception of one or two bosses that can be frustrating, but i'm not even trying to parry enemies, as i can't really ever time it right and the cost is too great. And to top it all it seems to me that you have to minutiously learn the parry window for each enemy in the game, so there isn't that much of a transfer of skill between them.

At the same time i'd really like to incorporate that into my gameplay, so do you have any tips about this?

get golden parry for the shield.
it extends the parry window + the range making it hilariously easy to parry.

yeah - but some bosses can't be parried. or only have 1 or 2 attacks out of their combos that can, and its not a sure thing they will use it.

I'd say yes and no. I've done a parrying build with Misericorde.
In the end I found myself just using AoW more (like Flame of Redmanes) to stagger PvE enemies and bosses stupidly fast while also dealing damage.
It had 2 main reasons:
Bosses usually take multiple parries to even get staggered depending on their cooperation it can be annoying to quickly chain parry them. And some bosses have a shorter riposte window when you parry them compared to a regular stagger. In which case its enough of a difference between a riposte and a Royal Knights resolve boosted riposte.

At least for myself I drew the conclusion that it can certainly be worth it in PvP, for PvE its rather lackluster.

Crucible Knights are very easy to parry and makes fighting them easier too. But for strong bosses you need to parry perfectly multiple times until they are staggered so I didn't even bother using against bosses. Btw, the best shield to use parry I think it's the Buckler

You can hold block and parry while doing it so you don’t open yourself up for a hit if your timing is off

I've always found parry windows to be too narrow to be reliable, but I haven't ever used the buckler, or golden parry, of which both apparently extend the parry window.

If you practice 200 hours sure you can probably have it down, but do you want to do that? Personally I don't.

It is always been a risk/reward mechanic from the very first souls game. If you master it you will do a lot of damage. If not you risk receiving damage or partial damage.

It's a staple move of the series.

I need to get back into the habbit of getting good at parrying.

It is definitely satisfying parrying margit to be honest.

Takes a lot of more work than in other games, for sure. Also, it is not an universal mechanic; that is, some attacks cant be parried but the game doesnt tell you wich ones, so you have to learn with trial and error, and that means usually dying a lot of times and losing a lot of time in the process.

Dunno, I guess if you have the time and patience to master it, it could be rewarding. But prepare to invest a lot of effort.

Don't look at their weapon when trying to parrying, rather try to time it with their arm movement. I'm doing a dual greatsword build but with a small shield for parrying for certain enemies.

For example, crucible knights gets a lot harder without parrying for my build as I almost never get a big enough window to attack without getting punished.

But some enemies and knights I find parrying pretty useless since I do enough stagger damage to them to just keep them stunlocked to death with my two greatswords.

The first crucible knight gaol is a great way to practice your parrying, I defeated him with only parries at low level (took me about 20+ tries though before I got gud).
