-It upgrades with somber smithing stones (10), which are MUCH easier to come by than the 97 smithing stones you need for the Hand Ballista.
-The requirements for the Cannon are 34 Strength, 12 Dex, vs 30 Strength and 14 Dex. You're going to be strength focused, so it's generally better to keep dex as low as possible.
-The damage difference might feel small, but you get a damage increase for attacking enemies unseen. Plus there's the boost from the talismans.

Other: Jar Cannon requires 4 more strength, but 2 less dexterity to wield.
Essentially the Jar Cannon has higher offensive stats, but also requires better stats to wield and weighs more, and requires sombering smithing stones instead of standard ones.
Love them both anyway.
