Take heart - your weapons and skills will improve the longer you play and keep at it. Just be patient, don't lose your cool, keep trying and on occasion try different things (like blocking all one fight, then dodging for all of another, doing it yourself once and then with a summon, etc.). You *will* learn and get better.
Take it from me - I'm 52 and have s*** reflexes and s*** vision, LOL. But I've gotten fairly decent at this game with practice. Tree Sentinel killed me about 10-15 times before I took him out. But after that, and after fighting regular minions on horseback, and fighting Night's Cavalry (a fairly similar boss, though not as nasty) in four or five places - I got gud. Gud as in when I fought (MILD SPOILER) two Tree Sentinels at once, I beat them first try. And then when I fought Draconic Tree Sentinel (who mops the floor with the one you're fighting), I whipped him first try too.
Hang in there - this game is like typing or weightlifting or any other thing that the more time you put into it, the better you get at it. Don't expect to be awesome at first - it will come in time. And there is no shame in watching a couple Youtube vids to see how some people approach a given boss - you don't have to reinvent the wheel on your own, and some folks might have spotted something or tried a tactic you never would have.
Be careful with this, since the shield during his shield slam can hit you directly, making the attack hit twice.
To be honest, that boss only gives you 2000 runes after you beat it. I rather do something else and come back to it later than to waste hours upon hours if I can't beat it. I have seen streamers wasting their time doing it from the onset they started the game. I just switch off and go watch something else.
I found horse battle vs tree sentinel way harder than normal dodging. Its harder to time my movement against his than it is to time a button press for i frames for some reason.
99% of the time i've dropped a boss they didn't pull out their entire kit.
I watched a "speed run" where the boss didn't even move.

Actually in my first play thru, I used horse combat to solo it. Its was relatively easier for me, based on my experience. But after finding that the reward is not worth the effort. I ignored it for my other play thru, going back to it when I done with something else.
I can see why some people find horse combat difficult, it varies with players or the weapon they use. For me it was easier on horse with a pole arm. Just hit and run, rinse and repeat. A sword is good too as you can make quick slashes.
I don't lock on by the way, the camera is bad for mounted combat.
I beat him both melee and magic, but I find bosses like Malenia, Godfrey, Maliketh, even early game like Loretta or Margit a lot more playable. They are more fun to fight.
You will get a lot of those types of bosses peppered in the game areas (Black Blade Kindred, Death Rite Bird etc). It's best to completely ignore them and fight the enjoyable ones instead in my opinion.
dodging to the back will cause him to usually sprint away from you which allows you time to set up and attack again. dodging to the front will usually have the horse raise its hooves to try and stomp on you which is very easy to dodge and punish. after it stomps it will usually sprint away from you again allowing you to set up for attacks.
its all about learning the mini boss. you can, if your pride will allow it, NOT FIGHT HIM and return when youre stronger with higher leveled weapons. the common thing most people seem to have and not wanting to give up is their pride. you dont have to fight EVERYTHING at bare minimum, this only make it harder on you. play smarter not harder.
even miyazaki has stated you can always fight things later.
