When it summons spikes from the ground, just keep sprinting, so you end up near it when it's finished, so you can get some hits in.
If you see it's doing a melee attack, but it's too far away to hit you, wait half a second and then dodge, cause some rocks are coming your way.
2nd phase is actually easier, because instead of charging you 3 times, it only charges 2 times and then stands around doing it's ray attack, giving you plenty time to stab him in the butt.
Other than that? Level your vigor.
Once you know how to avoid whiffing strikes due to him moving away - be really aggressive and stagger/burst him down.
I think getting bloodhound step can help as well to quickly get out of AOE zones.
Upgrade your mimic, equip better stuff for your mimic to use. You'll want to dodge through its attacks if you can.
He has so many attacks that make you fall on the ground you can't move and you are death.

I did it on my full-melee 70+17 build (although I did use +7 mimic for that fight) with around 10 tries.
Try bloodhound step if you need more dodging, I did it without, but I bet it would be easier with.
