I have no damn idea how to fight Night's Cavalry
Despite i active search (and beat) those ♥♥♥♥♥♥♥, i absolutely have no idea of what i'm doing most of the time.

Apparently, i can only fight them on horseback, playing a boring ass chasig game where i get punished most of the time (i almost mastered Tree sentinel fights, even the duo)

I won't even think to fight them melee on foot, not because i get punished, but because i can't even hit them consistently.

This one is easy. Sprint towards him to his weapon, He will always miss if you're inside his space. Or, get down on the ground and use jump attack when there's an opening. If you want to be adventurous, parry him and buck him off from his horse.

For the one that drops the Bloodhound Step, I climbed on a tree and nuked him while he ran around not knowing what to do, proving once more that there are few things that aren't better with cheese.

The Night Cavalry use exactly the same moves the player can: He has light and heavy attacks he can swing on both sides (but he prefers being right-handed), he has a jump attack, and he likes to do lingering hitbox shenanigans just like you can by holding out R2.

It's basically a mirror match except on horseback, except he as a boss doesn't play by the same low poise and health that Torrent suffers. I have yet to develop a consistent strategy, but make with that information what you will.

I found it easier fighting them off the horse, heavy attacks after dodging one of their attacks, or an attack inbetween their small swipes.

the dude on a horse with a flail? i one shot him using the other dude on a horse's halberd lol (tree sentinel) used a horse myself too

The Night Cavalry fights will depend heavily on what weapon you have. I generally fight them mounted b/c they swing slow enough where I can hit then horse sprint away before they can do anything. In certain fights, if you find they run around too much, use the geography to your advantage and stick them in a corner against a rock wall. Sure, the AI is smart enough to get out of it, but they have less options so you can smack them more often.

There's like half a dozen of them. The very first one (that most people probably missed) on the bridge to Limgrave east is very easy. He doesnt do much damage. Second one down in Weeping Peninsula isnt very hard either.

The ones in Caelid or the Mountains are a different matter.

Incidentally, there's a lot of bosses like the Nights Cavalry, Bell Hunters and those Death birds around, but they only spawn at night.

I was the same way at first. After beating the game once, I've naturally gotten better. I was actually surprised when I fought the two (not at the same time) in Consecrated Snowfield while on foot. They're the two hardest of the Night's Cav (supposedly). You can't summon for a lot of the world bosses, but if it lets you, the summon can be a big help for keeping its attention and making it not run all over the Lands Between between its attacks.

He's a lot easier when you're on foot, almost impossible to get hit since he doesn't have fast combos. Just attack after rolling under his swing and you'll be able to defeat him. Be ready to avoid his side bash if he stopped though.

You are supposed to joust him on horseback. Run around him clockwise spamming R1, back off when he charges up his aoe, and run back in to continue the circle slaps.

Melee is easiest for me. If you have a bleed weapon and/or one with long reach even better. Wait for them to come straight for you, or do a big jump towards you. Roll once, then hit them in the back, if possible with a quick weapon art or otherwise strong hit. After the hit roll once away again. If he falls down do a critical on him. That's pretty much it.
