In the Ashes of War menu at a grace, you can go to equip an Ash to a weapon and instead of giving it a different infusion, you also have the option to remove/unequip it from this menu.

You can apply the Ash of War to a new weapon and unequip it again as many times as you like.

Go back to the ashes of war menu at a site of grace/blacksmith, select the ashes of war currently equipped on that weapon, then the dropdown menu should have an "unequip" option.
