Their attack patterns are extremely predictable and telegraphed. You have to react to everything before it happens. Ie, dodge before they accelerate on the charge, start your jump attack while their spinny attack is still slowing down, etc.
Keep in mind that in most cases, rolling forwards is better than rolling sideways. Rolling backwards almost never works, but walking away from the enemy (NOT locked on) often does.
Only lock on, if at all, when at long range or right before one of your attacks connects. Being locked on severely hampers your ability to walk away from an opponent.
For weapon choice, your biggest pure physical weapon should do the trick. It will take awhile, but they just have that much health. Bleed, poison, rot, etc. doesn't work. You have to chip away at them.
They are still punishing, nasty, and tanky, but once I was forced to deal with them, it didn't take long to learn how. Just accept that it will take a few deaths before you'll get used to each attack.

This is with a bad weapon for my build(I'm STR FTH on this build), and I did just fine except for the 2nd one. Fast lightning damage works best.
