I just died 100 times to Ulcerated Tree Spirit (the one near the start)
So how the hell am I supposed to beat this thing? I can get it to maybe half its health, and then it goes insane. Not that its not insane right from the start. But I just....I have no idea, nada. Zero. Maybe it's my class, right now I feel like giving up completely. I think I hate my class. I dont know what to do, I think I might just stop playing completely.

you can come back to him later. I'd reccomend just sneaking past him and going into the ruined church building up the hill.

What level are you? If you haven't fully explored the starting area and the island to the south, come back later. It's definitely not meant to be fought right from the start. It's certainly doable, just not recommended.

What level are you? That's a boss you can't take on at the start of the game unless you are really skilled. Rather than stop playing completely, just go do other stuff. It's an optional boss and the rewards aren't anything amazing.

close stay close to the belly, but I also hat some npc help and was at ~lvl 30

This first boss teaches you the importance of rolling and not getting greedy. He telegraphs almost all of his attacks (except for the booty-horse hip-check). Try a few runs where you don't attack at all, just focus on dodging. Once you get comfortable with that, try incorporating a swing or two when you see the openings. He is a good first skill check to make sure you're ready for other bosses.

I assume you've already leveled up and have access to spirits and whatnot? If you are taking him on at level 1, just sneak by and come back later. No need to torture yourself (yet)

What a waste of time. Why are you even bothering at this point? The boss fights and exploration is not linear. Go do something else.
Bleed. It's the answer to most problems.

I got another one, not the one in the starting crypt, with the bow, I mostly cheese :D standing somewhere high enough and shoot 100 arrows :P

All of its attacks can be dodge rolled. All of them. You can either do what I did and keep re-fighting it until you learn all of the roll timings because you're too stubborn to go back through that stupid chariot gauntlet again... or you can acknowledge that you still haven't gotten it down at 100 tries, and:

A. Come back later (you shouldn't fight any boss that can kill you in just 1 hit, unless that hit is a grab).
B. Get a co-op partner to kill it with/for you.

Ulcerated Tree is the one in the first Swordkey dungeon, not the guy on the hipcheck-horse outside.

The tree spirit has the same attacks in phase 2 as it does in phase 1, they just do fire damage now. The only exception is its explosion AoE it opens with (your dodge has i-frames, you have to roll through it or block it with a decent shield).

Also you're not supposed to try and kill it right out of the tutorial area, similar to the tree sentinel outside. You can, but its not gonna be easy.

But if you are determined, its vulnerable to bleed if you have a bleed weapon. Mace or flail both do the job, the latter of which can build up bleed very rapidly with its weapon art.

Probably not the one you're talking about. OP talks about the giant friggin worm-tree in the dungeon behind the protected wall right before you open the open world. I just spent the whole evening trying to kill it (and clearing the dungeon, not easy either) and even with coop players is hard as all nails.

It looks like most of the people commenting don't know which boss you are talking about, but I agree that he is difficult given the very small room you are in. As others have said though, I would recommend leveling and coming back later. When I did that boss, it was actually to help a friend. We killed it for him, then for myself and our other friend. We were all around level 50-60 so it wasn't too difficult. However, as I said about the small room... It is still a tough fight.
