Anyone figure out what orange and red eyes mean for enemies?
Red eyes are all over the place in Caelid but the more rare orange eye effect is seen every now and then, I have no idea what they mean though I have theories.

Orange eyes mean that it will drop more souls than normal, as for the red eyes im not sure

From what I can tell, orange eyes mean they are frenzied / mad, and they follow the three fingers rather than the two fingers who are symbolized by the Erdtree.

There’s 3 types i’ve found so far:

Yellow - extra runes
Orange - Mad, inflicts madness status on player
Red - Increased health and damage

red eyes are usually stylistic but technically indicate they are stronger. Random enemies with orange eyes drop extra runes 4X as many as usual, yellow eyes mean the enemy is posessed by frenzy. Dont worry about mixing up orange with yellow, if there a bunch of them they are frenzied, if their is only 1 they drop extra runes.

When I found red/orange eyed demi-humans (I'm colorblind I can't tell the difference at a glance) it was at night, they have much smaller detection cones than usual, and they had much greater poise than usual, but only a little more health. Don't think they dropped more souls though.

Use that info as you will.

Were they "magic" focused bosses?

back in the Dark Souls games red eyes meant they were connected to the Abyss somehow
This time around I think it just means they are stronger than normal

Red Eyes were...complicated in souls games. Red associated with fire, pryomancy, and above all the true nature of the first flame (sunlight being in effect a religious lie built around the flame). Those who saw its true nature either became stronger, or turned to the abyss. Hence why some red-eyed enemies attack their own (abyss watchers) and others do not.

I've also noticed Red-eyed enemies tend to have greater aggression. They also drop more runes and items.

Player eyes can change color based on what they do:
Yellow - you've been casting dragon incantations and eating dragon hears.
Red - you've completed the bloody finger quests.
Orange - You've gone too deep and have been marked by the frenzy flame.

You can turn these off at the mirror.
