Margit is absolutely the worst boss in Dark Souls series, Bloodborne and Sekiro
upgraded weapons, leveled up, and still doing basically no damage

His attacks are just broken hitbox galore
His attacks are also rng. Sometimes he chains attacks and leaves no window to attack. Sometimes he doesn't. Sometimes he does 2 quick hits, sometimes, 1, sometimes 3.
All of his attacks have so much range as well, and combined with a broken hitbox it's just death

Actually F-------- tier boss

I went around a little bit and fought other bosses. they were difficult and I died, but I actually felt good about it. I felt good getting better and learning their attacks and dodging. ANd it was satisfying to fight them. Even if I struggled, I felt like it was doable with practice
Not with Margit. He's just rng. Has no clear attack pattern or telegraphing. Sometimes I die when I get two hits in, sometimes I die when he's 2 hits from dying. I don't see or feel any improvement in the fight. It's just a grind against the rng ♥♥♥♥♥♥♥♥ attacks, hoping he doesn't chain you to death, or use some attack you literally never saw before in the fight

In before basement dweller 'wasn't hard'/'git gud' crowd.

Summon jelly, +1 it for better results, get it to tank and let it poison him, hit him from behind a couple of times with a power attack and then circle to front and do the execution thing when he's staggered.
When he's in his second phase he'll wreck the jelly but you mostly just have to worry about the hammer AoE. After you hit him a down you can just wait for the poison to kill him while avoiding his attacks.

Breaking his stance to get critical hits is awesome. I literally finished him with a critical hit (the second of the fight) the first time I beat him,

No, but there are bosses whose attacks and tracking make Margit tame by comparison.
He's not as much RNG as he originally appears. He will many times do a follow-up in his combos if you're in range. If you've backed off too far, he may do two or three swings and then stop, not leaving you an opening to attack him back. Try manipulating the distance a bit more to bait out the full combo. That will typically leave him vulnerable for a jump attack or a few quick strikes depending on your weapon.

He also poses the first big jump in tankiness and damage output. If you Haven't spent time exploring, getting seeds, finding new weapons, etc. this is a nature opportunity to do so. Keep in mind, there can be combos that you cannot continually dodge if you are in his area of effect. This is why mastering distance is crucial. Bait the initial combo and doge forward on the final swing to counter attack.
Honestly I thought the exact same way when I first encountered him. I thought his attacks were so broken, and basically everything you said. To the point where I was about to refund because of it.

But I took another look and made a different build with my character, went and got a summon to help take some aggro, learned the fight a little more and bingo. Was able to easily take him on and have since gone through just about 60%+ of the game now and it just keeps getting better.

I am honestly so glad I didn't just give up because of him cause the game is absolutely stunning and awesome.

The tracking in this game is sodding stupid across the board, to be honest. It's so cheap.
Souls 2 bosses also had the exact same extended combos that they did or didn’t use. Margot’s additional attacks are at least predictable and based entirely on your position. Ever wonder why he takes 3 years to grab his staff? He’s baiting you in. Instead of just complaining about “bad design”, stop treating this like every other souls game and adapt. I managed to beat him solo with no summons perfectly fine after finding a better weapon and doing some exploring (lv35-40 using a great axe, hammer talisman and the one that ups your attributes but also increases damage taken). If you have the poise break for it you can play hyper aggressive. If not, you play very passive and look for the right openings to go on and the right timing.
I killed him with a club before my first level because I thought it would give me the level mechanic. Best fight yet.

He will take longer to defeat but it's not your level that determines the ability to parry. He just needs to learn, it'll be beneficial. Even if he doesn't have a 100% parry rate like this guy, 1 is better than none if he's having issues.
