That being said Radahn takes the cake for me as the worst boss I've ever had the displeasure of having to deal with in any souls game. As a melee character this boss is basically unplayable: you can't for the love of it see what is happening. The boss is constantly obstructing your screen and scooting around on his turbo horse. Combine 0 vision clarity with various 1 hit abilities and you have one extremely unfair and frustrating fight on your hands.

That was another one of those "just jam 2 bosses in an arena and pass it off as a new one" right? Wait until you get to Godskin Duo, that one is the worst of them all.
He went down anyway, but still, ♥♥♥♥ that double tail swipe covering the whole arena.
Bosses haven't been an issue yet, though I've had a problem with them just randomly dying out of nowhere. Trigger with the mounted ones happens just after they despawn. Pretty much all of the ones mounted can be killed by just running away from them to be clear; Mostly tested on console. Can do it with the first mini-boss on PC right out of the tutorial area. Main concern is loosing their drops, though I don't if any of the bosses that can drop are unique or not. Pumpkin Head, whatever the headgear is called, can be gotten elsewhere if it doesn't drop from that boss. The unique items they drop seem to all be forced into our inventory as well.
Edit: One side note, you have to use skills rather than just the jump button to do some of the platforming as the jump, even when running, isn't high enough. This end makes the platforming more problematic in some areas.
