Give examples of this otherwise this critique is meaningless. Do you want the makers of the game to time travel people from the early 20th century to write the script?
Missions with a yellow/gold highlight are main story missions, missions with white circles are side missions and are optional/missable. It's pretty easy to understand, I didn't even need someone to explain that to me.
Give an example of a game that has a better looking environment. I'll wait. Do you live in 2035 where video games look exactly like real life? This is one of the most aesthetically pleasing and graphically advanced games out there.

If you took 5 seconds to walk around camp you'd notice the kitchen area where you can donate food items to the camp and where Pearson works is a chicken leg symbol. That means food. If you want to Strauss's wagon, you'll see a plus sign which is the universal cross symbol for medical supplies/potions. If you walk to the back of your tent area you can pick up ammo which is a bullet symbol. The symbols in the top right can be gold, white, or red, gold being good, white being ok, and red being low on supplies. This corresponds to the colors that you and your horse's cores can be. The game is really consistent on this front, it's not hard. You're just more content to spend hours arguing on forums than to take a minute and figure this stuff out on your own.
This might be the first decent critique you have. I agree that the melee system is pretty lacking and I don't know why they didn't put more effort into you being able to fight well. I feel it's pretty random whether my punches connect or I'm able to block strikes from my opponent.
It's realistic and takes little to no effort to maintain your guns. This is simply your preference and not anything wrong with the game.
I've never had this happen, weird. As long as I stay in the area the corpses stay there, even for a while afterwards. Occasionally stuff will despawn but often times a corpse of a person or animal will stay there and rot for days.
Just keep your cores full. Buy/use items that fill your cores more quickly. If you eat bread chunks yeah it'll take a while to refill your cores. You can refill your cores while on horseback so it literally takes no time at all.
I don't think there is a dialog log which I agree is annoying. Other games I've played have this. Maybe there is one, I'm not sure.
The paths the game gives you are usually the most direct route via roads. But you can take any number of paths, it's not hard.

Why do you always want to skip the cutscenes, especially if you've never even played the game before? Maybe you'd find the story more compelling if you didn't always skip important content. How are you supposed to understand the story if you're not even trying to follow it?
Why is this remotely a big deal to you? It's also completely unrealistic. Dragging an animal while riding on horseback would be completely impossible in real life, try dragging a deer behind you holding it on a rope while on horseback. Let me know how it goes. Also let me know what condition the carcass is in when you're done. It'd be ruined.
They've patched the game plenty of times since it's been out, but I agree that I'm disappointed there's been no DLC for SP since the game's release which is disappointing.

A lot of people love this game because there's a lot of fairly realistic elements to it. It sounds like you just wanted a western version of GTA so you could run around and just shoot everything. You don't seem to have any interest in the story or interesting realistic details. What you hate about the game is a lot of what people love. If you look online there's plenty of complaints, many valid, about the game. I'm not a fan of the very linear mission progression and wish you had more freedom and options in the game, but overall I think it's phenomenally well made, and I think a lot of your critiques are BS because there aren't other games out there that are doing it better.
