Will there be a limited demo like other mmos?
Didn't get into the Beta and want to see how playing it feels to me before i spend nearly $80 on it.

ah so the refund policy will work with it? ok nice that's good atleast hopefully i can see a decent amount of gameplay in those 2 hours before i make up my mind :)

Nope. All games incl. early Access and of cpiurse pre-order can be refunded anytime before launch (this might have changed read the policy).
But also 2 hour too test a MMO is far from enough. Most don't really open up until several hours in.

Incorrect. There are Games that even have the warning on the Storepage where it literally says that "This product is not eligible for refund."

If a Game is not refundable then this warning is near the Button "add to cart".

yeah i know that i have played quite a few mmos hopefully it will let me get enough of an idea of the combat and how the latency feels.

To give you two examples:
- Star Wars the old Republic (MMO)
- Final Fantasy XIV (MMO)

The reason for this is that those Games have their own Launcher and could be started up without using Steam (thus Steam wouldnt be able to track played time on those). Also that they would have a problem with the purchased Game-Time and other stuff.

Have you tried the Demo?
When i open the Storepage of Dune, there on the right side (scrolling down a bit) is a Button to Download a Demo. (havent tried it yet myself, but maybe it lets you test what you want to test)

SWTOR: FREE to play. Of course there is no refund. And as i very clearly wrote above: Only certain DLC's and in-game purchases might be exempt from refund.

And FFXIV is a Subscription service. Squenix is the one responsible for any refunds.
All the DLC's follow normal Steam Refund Policy.

This is only the case if the game is f2p has consumables and game currency as mtx.

Having said that valve allowed people to refund poe2 EA but GGG bans the account.

Read the store pages again you very silly 'person'.
Everything is refundable EXCEPT a Free to play (swtor) and a Subscription game(FFXIV) and the other exception is posted (twice). Pretty difficult to get money back for something you didn't pay for, and Steam do not run subscription services for other companies (duhI). You can still refund those games at the publishers.

The Information i gave was literally because i did read what is written on some store-pages, and it was a response to a claim that statet ".. no exceptions.", what was simply incorrect.
If you still dont get that, then i am not able to help you further and will simply ignore you now.

We cannot say if there wont be a limited Demo access available, limited to the south Basin area, no access to the social hubs. No ability to trade, etc. Limited time, plenty of ways to go about it. Who knows what the future will hold.
