why can I not see the people that I friend in game?
It only shows my steam friends in game, so where do my apex friends go?

If you have the Origin App, you will see them on the friend list there (since Origin is technically an EA app). If you have an XBOXONE or PS4-5 console with Apex installed, you will find them there too. For some reason, Steam will not show these friends you add in game, because they're technically not on your Steam's friends list (or aren't Steam users). You will only see them in your Apex list if they're actively playing Apex or if you add them via Steam itself (finding their account, etc if they have a Steam account).
