Saddle + animal inventory disappeares when animal dies.
I get it... My tamed animal will have difficulties following a path created for him out of 2 rows of stairs, and instead will choose to yeet itself off the cliff and die. Pathing is hard in such a game, one in which the mining voxels still spawn half-inside walls and other things.

BUT when I go try to pick up whatever items my tamed animal was carrying in his saddle, there's basically nothing. I've lost a whole set of electric furnace, foundries, solar panels, etc because they simply... disappeared. Nothing on the animal, showed empty inventory, saddle missing, items missing.
It's happened twice, and every time, I've lost what took many many hours to find mats and to produce.
Is there really no way of getting those things back? Why doesnt the tamed animal leave a "grave" like the player does, upon death? :(

Yes it is annoying and the dev's should fix this so you get all the loot on the mount is in it's dead body! If i got into the situation you describe then i would quit the game and never play it again so annoying do i think it is!
1) If you are afraid of losing your pet or some other unpredictable problem, I recommend that you save your Icarus progress to a separate folder on another partition of the drive (or flash drive). (disable Steam clouds, otherwise, when you manually return your saves, there is a chance that Steam cloud will return the original saves).
-------->! You need to save the entire directory c:\Users\"name your windows account"\AppData\Local\Icarus\Saved
You can do a 'full rollback' with this.
2) You can try to ‘roll back’ the save via a backup file, which is done every half hour or when you exit to the ‘character selection’ menu; until that moment everything was fine.
Mission names usually consist of a set of letters and numbers. You can determine which save was from your mission by the fact that these *.json files will have to have the latest creation date.
A fairly detailed description (by analogy)
