You don't have to forge a bond with every god, just most of them. You'll trigger the ending while working towards that goal.

As for Hermes and Poseidon I am a bit confused. Are you sure you did the steps correctly?
Give them nectar till you can't anymore (on the codex you should see a locked heart). Then talk to them fulfilling the "favor" requirement. (Hermes, 3 star plume. Poseidon, caught a fish that run and ~20+ across all runs.). After that you will now need to start giving them ambrosia to finish out the hearts (I think 2 bottles each?).
They don't give your anything for forging a bond. You'll know it's done because you have filled the hearts (and you can check the keepsakes that they gave you, they will now have a cute cartoon version of the person in the corner and a little note from them).
To add to the post above - you need to catch a fish and after that talk to Poseidon during that run. And again, the triggering line for unlocking the hearts might or might not be shown, so you need to keep trying following those steps for it to appear.
I already reached the locked heart for all of the Olympians, so I just have to keep trying until I get the right sentence.
This kinda sucks IMHO, I'll probably get bored before reaching the end... oh well.

To be fair it isn't a secret or even true ending, it is an epilogue. I don't think it is meant to be something you specifically go for to finish the story, but is meant more as a bonus for people who keep playing the roguelike.
