Why Would Anyone Sell Boons?
When boons are the best thing money can buy and the gods offer to switch them with upgraded rarity alternatives? Besides It's not like you would be out of slots.

I did to get enough money to buy styx drink, an extra life is better than most of lvl1 boons.
But i agree, i keep them all most of the time.

There are runs and builds that don't benefiot at all from some boons. Why not sell them for money?

For instance. Why would I need lightning rod with my cast build? I want my stones back.

Really depends on the run, what kind of build you're going for and what you're offered. There's many instances you may opt to sell boons. A certain pact condition will even force you to sell boons at the end of a biome before you can proceed, which will put you in a mindset of making sure you finish an area with something that isn't as beneficial to you that you can sacrifice.

Your chances of finding boons from gods who already gave you boons are increased. If you happen to pick up a boon from a god you did not want then you can sell it in order to have better odds at getting boons you want.

There's also a Steam Achievement for selling a legendary boon. I got it by selling Poseidon's fishing boon. Didn't need an increased chance for fishing spots, but 1k gold? Yes, please, I'll take that free diamond or 1k off titan blood, thanks!

Why sell Lightning Rod? It's hilarious watching Hades die just by running around in circles not being able to touch me!

Another consideration I haven't seen mentioned yet is poms. If you have boons that aren't contributing much to your build, it may be beneficial to sell them so that it's easier to focus your pom upgrades on the boons you DO care about (especially relevant if you use the mom-pom).

Some duos, legendaries or even regular boons are just not usefull for the run, also heat option when you have to sell something a boon is pretty easy to manage, atleast the first one.

Two more reasons to sell boons: (1) Boon Purger, (2) 100% Olympian Free. Maybe you want to go for a Well of Charon-enhanced build.

Why would I do that when my cast does like 10 times the damage?

It's been highlighted, that boons can be less beneficial, or they could be a "forced" choice and you'r glad to have the option to get a new boon to cast, attack , special , dash or aid.
The coins could be needed for a desired purchase.
If you'r sure you'll beat hades and you'r sure you'r hundreds of coins short in styx to buy a titanblood or diamond you might prefer to sell boons then to waste the opportunity of the material. You might want a specific unlock and you miss coins for a purchase or as mentioned the boon is "hindrencing" your desired build.
You might hope for a death defiance and need coins to be sure to be able to purchase one if you find one in a well of charon.
Even a summoned companion can feel worth more then a hindrening boon, for example you feel stuck on demeters cast and prefer your common cast and the option to find a cast that feels more suited and the reason you picked is, because she offered removal of freeze on 10 stacks, mistral dash as replacement for Athenas dash and her cast upgrade, so you went with that instead of the other boons, then you might feel happy about the option of selling it.
It's a feature many runs feel questionable to use, though I often check, if it's worth selling 1 if I get the chance.

Maybe to get the perfect boon setup? I tend to purge some of my boons as they are not as beneficial as others and I have personal favourites I want to acquire. This doesn't happen all of the time though.

Doing persephone keepsake runs can get boons to crazy numbers, you want to minimize the chances of it wasting a +1.

Once I tried to put uncle Possy push boon on the primary attack for the machinegun and the fists - what a pile of crap these ideas was :lunar2019crylaughingpig:

What are you talking about? Poseidon on the rail's attack is amazing! I call it the Super Soaker. The knockback helps mitigate the rail's lack of hitstun and if you use it to shove enemies into walls they get absolutely obliterated by the rapid-fire slam damage.

1. the less boons you have, the better chance mom pom and eurdice ambrosia +1s your good boons
2. boons you dont need or use are better off as extra death defiance, armor damage, casts, etc
3. you have the pact debuff that forces you to sell a boon each level
4. you use shackles and were forced (due to a pact) to pick up a primary boon (ex: ares, dionysus, zeus) that requires tons of support
5. to get unique dialog with hades at the end of the game if you have no boons at all
6. you use the green side money mirror buff, the excalibur, and the money slash hammer

tons of reasons to sell boons.
