Where does the game keep our records of the runs we've done? Is it part of the save file?

Yes but where is the physical location of said records?

There's two cabinets along the right wall. They have glowing spots. You can't miss them.

LoL you mean the save file.
On Windows, they're located in Documents / Saved Games / Hades
On MacOS, use Finder’s Go > Go To Folder menu and navigate to ~/Library/Application Support/Supergiant Games/Hades
