So confederating Golden Order asap is the way to go
get a Skill (which name i forgot) that prevents him from dying. Look in the Skilltree in the Line at the top at the far right somewhere - there you will find the skill and the exact explanation.

Yes, every general and hero gets it for free at lvl 20.
Oh and for the Empire, you have Boris Toddbringer. He's not actually legendary, but he is legendary in the hearts of people on the forum.
Plus, he has a unique model.
Every general gets the immortal trait automatically at level 20 (TK priests get it at 12). It takes a while to get to level 20 when you're starting out, so if you see a suicidal battle coming next turn, swap out your general with a rube to die so you preserve your better general.
As GG mentioned, the recruit defeated LL mod is good as a stopgap measure for recruiting LL that you never got to confederate before they died (like you'll not contact the Hunstman general and the new start position for Holier-than-thou in the southern desert). If you get it though, there's a second mod which I can't remember name offhand but was a mod for configuring other mods...set it up so that the only generals offered to you are "same race".
The only problem with that mod is it messes a bit with the Elector system, but I find access to the distant LL if they die is more than worth it.
Not necessarily. It's very well possible to confederate them moderately early.
The trick is to send an agent to uncover them asap and start diplomatic relations.
What exactly does it mess up? How can I avoid it (not recruiting certain lords, console commands etc.)?
I dont need to recruit lords if the game is broken beyond feasablility afterwards
