Also depends on their combat animations. Some fight different I remember right.
Being different types of magic dragons, they should have different spells.
For fire magic access you typically want to go with the hero mage, because they are the only one that gets a dragon mount. Life magic is generally the best option for Archmage Lords, because healing is amazing for single entities.
Moon Dragons breath is also more powerful.
Star Dragon is your anti-large dragon, its breath is focused to hurt big single entities and it has the best combat stats for prolonged fighting.
But do not send it against actual anti-large specialists, its still a flying monster meaning flying is its biggest advantage and it pays for it in weaker stats.
Star dragon has the lowest (but still quite good) charge bonus and highest sustained combat stats. It's the best able to stay and brawl... but it's still got good mobility and that should be taken advantage of.
And Moon is in the middle.
