Everything else will be on the map regardless.
None, not yet. Play, you will stumble and you will fall, but in time you will learn how to stand up and survive. Sure some battles will leave you with only maybe 300 troops alive out of the 2000+ you took in, but you learn where to put what unit. It is a long game, a very long game to learn.
There are some good YouTuber people that can help you learn faster, watch them.
Remember never to race and try buy the best units you can as you will run out of money, instead learn how to use magic and ranged stuff
As far as dlc goes, absolutely none of them are mandatory/you don't need any of them. So it's best to pick ones that enhance particular factions you like. Just try a campaign for a faction to get a feel for if you might like them first.
As far as biggest bang for your buck, I'd rank Previous 2 games>DLC only factions>dlc related to favorite factions>everything else.
I don't think there's any DLCs that the average person would say is "needed".
Wait to buy DLC until you've tried out some factions and such and know what you want.
Of course another simple, but probably more expensive, way of unlocking 15 out of the 22 races is buying all three games.
This is the proper answer imo. You can also get bigger sales on DLC for the first two games which work in the Immortal Empires map of the third game.
You do not "need" any DLC, the base game is fine without DLC
DLCs are optional extra content (more playable factions, units) which meaningfully extend the game... all DLC are worth to buy, but not "essential", all races are designated to be fine with base game units and without DLC units. DLCs just add more options.
As others posted, buy what You are interested in, so You can play the game - see certain lords or units and want to get access to them.
my personal recommendation:

https://store.steampowered.com/app/1315750/Total_War_WARHAMMER_II__The_Twisted__The_Twilight/
You don't need any DLC. If you become interested in a race in particular, you can consider their DLC's.
If you are asking the most bang for buck, the best "dlc" are base games I & II.
If you want to know the most well received DLC, it's The Prophet & The Warlock.
