For the flamethrower it is best to use when your lord is forward with one or multiple enemy infantry units on him, allowing your flamethrowers to scorch the enemies while doing little to nothing to your own lord

You can move them after the engagement to get clear sight
Now for torpedo, they have high range (180 or something) and with a little arc on their projectiles which helps throwing up the heads of your dawis, they have anti large bonus so focus big things with it, note that the explosions of their toperdoes make them also decent against infantry
- Position them on the upper or lower part of the hill so that they can shoot over the heads of your units (a few might get roasted still, you need to experiment a bit with the distance position)
- Engage the enemy with your front line, then move your drakes over the flank to fire into the side / back of the enemy forces
- Stagger your infantry (chessboard style with a bit more distance) and let the drakes fire through the gaps
Bonus tip: Turn off auto fire to avoid them firing when you are still positioning stuff around.
They need perfectly unobstructed view to the enemy, else your own dudes will get burned.
Do checkerboard-ish formation and put irondrakes in between and behind two dwarf warriors, this way they will actually have line of sight and proper trajectory to not do friendly fire.

With the new changes they can also a little more reliably shoot over your own troops, but not so much in melee; that's a recipe for burnt beards and angry glares.
But they only have a range of 80 so you'll only get 1, maybe 2, volleys off at absolute best. Things with decently high leadership won't be hugely impacted. Just seems like a waste of potential imo.
