I'm pretty sure she eventually gets a building which gives 100 schematics a turn and she has a tech which improves the amount you earn from battles.
I just finished her roc campaign around turn 80 on VH. had plenty of schematics to unlock all the way to lvl4 and nearly all the upgrades. Took out vampires and then Skrag and then I went into Norsca and wiped out most of that (and sold it to Malaki so I didn't have to deal with red territory). If I continued past the end game battle is head east across the mountains to fight Chorfs, they'll give lots of schematics.

It's impossible for us to see what the map state of your game is, if you could share it with us we could better help you.
And yes if you're really this obsessed with getting every upgrade, even though it's entirely unnecessary as completing the quest objective before then is more then easy enough, then go ahead and kill literally everyone.
