Vs straight up infantry greatswords work pretty well even though their stats don't shout that at ya. Pretty much total war unit's MA and MD stats are secondary to things like attack animations/mass/unit size. The tooltips for the guys are pretty accurate though, if it says damage dealer or anti infantry- it'll do fine in campaign.
More to your question- I find mixing in heroes is the DOOMSTACK you're looking for. Empire infantry is simply lackluster but Warpriests, captains, and witchhunters can cover a lot of their weaknesses. That being said, mix in the state troops and renown units- thats where you're doom in the stack will come from.
Anyway the best Empire Doomstack is the steam tank doomstack. Pretty basic suggestion, but if it ain't broke, don't fix it.

I'd say nothing in the game can defeat that. Elspeth has some very viable doomstacks to make too.
i sayed efficient and not effective. Sure a Doomstack is hard to defeat but u never need that and u can easily scrap 2 Armies with the cost of 1 Doomstack (if there is no extrem buff on them)
After nearly 600hrs on the hardest difficulty there was never a need for a Doomstack for mine cause the Game is so much easier than TWW WH2
Basically play Empire as if it is Empire Total War.
4 heroes, 4 tanks, 4 ironsides, 4 rocket bateries, 2 long rifles
thats 18, you can fill the last 2 with whatever your heart desire.
Just forget infantry exists after certain point. They are trash and only really useful at the early campaign, at least in Empire's case they are. Your best defensive infantry has 40 armor and no shields. They are like bloons they pop instantly when the weakest missile hits them.
If you buff all of their ranged damage skills which will be at least at level 30+ you will have some powerful ranged units.
But do be careful about friendly fire, because I had my group instant kill another hero in one volley.
