So either you try to reveal them with a hero.
Or walk over their lord and hope you have enough ambush defence or you can win the ambush if you can't defend against it.
Rush armies should have no trouble just charging headfirst into their ambush but soft armies like empire or kislev can be problematic.
If you are not playing on legendary you can just keep reloading saves of previous turns until one of your characters manage to spot them.
Playing as Mother Ostrankya and I'm trying to get some early wins and essence with the beastmen army near mortahi, but it's hard baiting a attack at the right time.
Then you can try to use heroes as usual, or if it is a smaller / harmless army then walk right on top of them.
Get an extra Lord
Put your main lord in ambush stance next to this new lord.
Beastmen will go for that single lord if you're at war. If Ambush is successful it's a slaughter, if it's detected the beastmen can't run far away enough to hide again.
After that is done, just fire the single lord and proceed to get rid of Beastmen settlements.
