basically, if you can not auto-resolve the battle with him then you lose :D
Atleast thats how it is for me.
What you do is use lords/heroes of your own, high damage monsters, focused ranged fire and single target damage spells. Combining several of these suggested damage channels might be necessary. Also fire damage is a good idea since it halves the regen.
Sometimes ignoring the lord/hero and destroying his/her army might be enough to trigger army losses and make them break, but if they are unbreakable or if the army is small enough this might not work.
Debuffing with spells and items will help a lot.

Or like others said: debuffs - or something like spirit leech, to bring him to the healing cap faster...
Else: It´s not that he´s unkillable, but he´s just a bit magnificent...
but it is what Triple G says, but i will kinda add to it:
use footcharacters to outnumber him, even with worse stats 2-3 average fighters win vs 1 strong one. you can do that a turn before you fight him by removing your mount.
