OP, the Vcounts falling apart in seconds from max health comes from triggering an army loss, like causing other factions to flee the field. Killing their Lords and Heroes isn't necessarily enough to trigger that, though it does contribute a lot (more than it does against other factions, even).
Vcounts largely rely on large health pools, high model counts, physical resistance, and lots of healing to outlast their enemies. Their units tend to have lower matk and mdef than others, and very few of their units have much armor (only Grave Guard, Black Knights, Blood Knights, and Terrorgeists).
Don't try to out-grind Vcounts, they excel in drawn out fights. Bring high damage units to overpower their healing. Focus fire and burst their units down one at a time, they can bring a badly wounded unit back up to fighting strength but not a killed one. Also, prioritize killing the Vampires, Necromancers, and support units like Corpse Carts and ESPECIALLY Mortis Engines so they can't heal their troops.
Oh, also, low armor and healing dependent? Early game: Overcast The Burning Head. Late game: Overcast Flame Storm.
Also target their lords with ranged or strong melee units (make sure they are supported, vampire counts are usually strong).
They might retreat and get a ton of units the next turn, but those units will likely be worse than their original army. fighting vampires is a war of attrition. If they have the upper hand you might need a decent siege defense to turn things around. Also, ALWAYS make sure your units are replenishing after battle. Vamps spam armies of weak stuff, but 4 armies of zombies can run a number on a single army of chosen if they're allowed to grind you down. After every battle replenish.
