Regular Goblin shamans have a wider variety of mounts because they don't live underground.
This is the lore explanation and the Night Goblin shamans are mountless in the tabletop as well, the only compensation being their Magic Mushrooms and cheaper points cost.
I would update the lore for the gameplay reasons, they need to have acces to mounts
Maybe thats just me knowing nothing about the lore, but to me it doesn't sound as much of a problem to give them a spider mount.
Surely the deep caves of the Warhammer World also have large spiders in it.
Note that "Goblin" and "Night Goblin" are two different things in the game
