Bretonnia economy is wierd

I can't understand what you are supposed to do with money as bretonia.
The only end goal of money is to make soldier, either by making guarnison or army.
Brotonia make an insane amount of money so I should spent for an insane ammount of soldier right?
No because then I start losing the rate wich I gain money in the first place.
So what I am suposed to use this money for?
Make knight chivalery? they cost a 1000 to maintain.
I never managed to go very far as bretonian (mostly because I don't like their battle and their auto resolve is bad).
So what I am missing? the vow? is there some point when you start to have unlimited army slot and that money is usefull?
Please enlight me

Bretonnia is a simple agrarian society scratching in the dirt, so they will not have the mobilization capacity nor the budget or even agricultural surplus for vast granaries or population

To elaborate, Knights cost about 1/3 as much if you have the appropriate vow completed for them. There's three tiers of vows to complete, each for different knights.

Are you referring to mere peasants as soldiers? (In my opinion) As Bretonnia the largest piece of any army should be their many different knights (cavalry). Bretonnia being extremely specialized in said cavalry.
