Game tried to eat up all my RAM
I have 120+ hours in this game and never happened to me before but today while trying to play the game started getting super laggy to the point where it wouldn't even shut down properly. Eventually I opened up task manager in order to close it and it was eating up all my ram.
I have 64GB of DDR4 at 3200 mhz (bit overkill for what I actually need but it was super cheap so ♥♥♥♥ it). Should be more than enough, but my RAM usage was at 99%. Upon closing the game it was at 8%.
Has this happened to anyone else?

Turn off unlimited video ram. This might be the culprit

I'll try that and see if the issue repeats itself, thanks.

Er. No. The box "unlimited video ram" allows the game to use your RAM AS video ram. See? Now go back and review all your other claims. Perhaps some of them are as ignorant as "That would eat VRAM."?

It allows your system memory (RAM and HDD/SDD) to be used as VRAM when your videocard memory is full. Obviously system memory is not better than your graphics card memory. So if you have plenty of VRAM keep that option unchecked.
