Whichever you like the look/feel of better, they're quite comparable. In skirmish tests vs AI they've gotten similar kills/damage value for me. They both require direct line of sight which can be difficult if you don't have a hill for them or a gap in your formation. They can still fire against large targets over your infantry regardless, but will struggle to shoot infantry or foot lords like Vlad when they're close.

Iirc organ guns penetrate more, helblasters deal more dmg due to more, but weaker shots per salvo.
