cavalry can also do hammer and anvil charges, as long as your ranged units are not standing to far away from the front line than they should trigger harmony when your cavalry hits the enemy position.
Jade Lancers are not "classic cav" for for Cathay either way. They are decent in low numbers, as 1 or 2 "quick response" units or warmachine hunters. That's pretty much the purpose of cav in Cathay, which to be honest, kinda suits their set up.

I think it's cool to play whatever you want without much regard for the meta.
Cavalry maintain that formation. Cathay is a combined arms army. The same line that holds the enemy for the ranged, is the anvil that holds the enemy for the hammer
Because close coordination is important, under no circumstances should the enemy be allowed to disrupt this. Cavalry allow for rapid redeployment (e.g. vs tunneling Skaven) and blocking of major breakthroughs (any SEM legendary lord, monster, super chariot, etc)
Traditionally Cathay like armies suffered when they lacked cavalry, and at their best made excellent use of cavalry
