You can go kill whoever is left of the campaign objectives. Or just ruin whoever ticked you off. Or always popular pick a continent and burn it to the ground. The choice is yours.

For immortal empires its more of a sandbox experience (you choose how to play it). You could always go for the victory conditions, but to be honest i find myself having the most fun when i make up my own objectives.
Maybe you want to burn Kislev and the Empire to the ground? Maybe Cathay haven't felt the bite of a Khornate axe in to long? Maybe you want to sail over to Lustria and the Lizardmen? Heck you could even go for the dark fortresses down south?
