Stack campaign movement buffs and use ambush stance a lot, you're far more likely to catch such armies with those two. That said getting a town sacked or razed is not a disaster, as it usually only happens to settlements that are poorly developed and don't have maxed out defences.
A single lord sitting in a settlement can help catch such annoyances, they start the battle with your main army reinforcing (in march stance if necessary).
You need to raise a second force ahead of the invading army to either bolster the garrison of a valuable settlement in their path or go out and defeat them or slow them down for your main army to destroy.
Or if you have a high enough hero in the area, you can use it to block the army's movement and slow them down for your main force to catch up.
I can see reasons for both, keeping sacking as is and taking the rest of your armies turn. Although they might would have to increase sacking income if they'd make it take longer.

not make it easier, make it more sensible. CA should develop proper AI or at least some AI, when strategy colossus carrying their name over 20 years. And certainly not in a way, that only thing AI can properly do is harrasingand baiting. Do we play Warhammer guerilla tactics or total war? Its laughable , how their AI is like stupid calculator working on bad formula but this, THIS knows perfectly. How to outrun someone by 1% to not catch them. Pitty they weren't so much precise to learn them better and more other thing.
But sure, let Khorne and Taurox have that as exclusivity. Don't see reason to have that with anyone else. fighting isn't thing, after which energy of all kind( translation for fantasy game) would remain stockpilled fresh as at " morning"
