As I'm a dwarf player, I'd better remember to UN-toggle slow speed too when needed XD
Generally speaking all cavalry, chariot & air units you want to be Guard Stance Off & not in a formation lock (give them manual orders).
There are really good videos on how to do charge attacks on youtube, its the easiest way to learn.
Units running doesnt really exhaust the unit to a big degree, so feel free to always run. Combat will exhaust them really quickly so it wont really matter if they attack fresh or active.
(9 out of 10 times your units will enter the combat fresh if you just head-on charge at the enemy)
If you give your units an attack order, they will attack that unit, however, if that unit somehow goes invisible (be it due to entering trees, going behind a hill, activating an ability to give them "Stalk" and so on) the unit will drop that attack order and proceed to stand still.
Like the first person said, units wont begin to charge at the enemy until they are very close to the enemy you gave them the order to.
But do keep in mind they only charge the enemy unit that you gave them the order to attack, not ANY unit.
So if another enemy unit intercepts your unit (by it running past the unit you intend to attack, or by attacking your flank/back in melee) you wont get your charge off. This mostly doesnt matter for infantry as they usually have low charge bonus, but for cavalry, monsters, chariots, lords going in for the 1v1, that can have a large impact.
