That said, and bear with me here, I saw this and thought 'not this ♥♥♥♥ again' as I had a very similar issue a few years ago. Unfortunately I couldn't tell you how to definitively fix whatever your issue is (assuming it's related) but I'll describe my experience.
Friday 8th December 2017. I'd preordered Warhammer 2 but this was my first chance to install it as I had several weeks set aside. Installed that day prior to my last engagement of the year that weekend. Quick launch and benchmark run before I left the house, all good at 56 fps ultra (specs btw were 6700K/1070/16Gb 3000MHz RAM/Win 10/all NVME storage/2560x1080 res)
When I returned on the Sunday evening the game ran at around 20 fps max whatever the settings. After a few tries to fix the low fps I started getting major artifacting, like my 10 month old GPU was dying hard. A few tries to fix later the game simply refused to launch. By the next morning this launch failure had spread to Warhammer 1 as well.
I'll mention now that despite what advice I'd sought, my GPU wasn't dying. In fact every other game I had installed, including some earlier TW games, ran just fine and to known expectations. Further to that, no advice, official support or reasonable and/or insane potential fix imaginable did a thing. After two weeks of near torturing my PC I had to concede the games were simply and infuriatingly broken for me and move on. Just me it seemed as I hadn't seen any other reports like it and tbh wasn't believed that the issue wasn't on my end.
Some 6 months later, with the release of The Queen and The Crone DLC (I still bought DLC with the idea that I'd either figure it out or buy new parts eventually) I idly decided to try launching the game, still installed, kind of just in case.
Lo and behold, it worked just fine. Just like that and apropos of nothing I'd knowingly done for months. Crazy stuff, and like nothing I'd known in gaming since the 80's.
Worse, I'd missed my chance to get into the game by then, my life circumstances had changed, and I didn't get back to the series until Warhammer 3 and this year. Tbh I came very close to quitting on TW and CA over this after having bought and supported every TW game since the start.
Now, I'm hoping your issue isn't anything like this and is more easily solved soon. And I'm honestly sorry both that you have such an issue and that I can't offer any solid advice or fix but to try the usual avenues everybody knows of (verifying files, updating Windows and apps/drivers etc, reinstalling game/Windows etc) But fwiw this game/series does occasionally just throw ♥♥♥♥ like this out there.

Dang! I was hoping switching to 3440x1440 would magically fix it lol, no luck though.
Your problem from way back actually sounds familiar. I may have encountered something similar with either WH1 or 2.

If I go fullscreen it works mostly (the lord selection screen for a new campaign cuts part of the lord video) but otherwise works fine (with the added performance penalty of playing at 5120x1440)
If I try to do windowed I'm restricted to "regular" windowed mode which leaves the window top-bar on display.
And I can't find a way to force borderless window.
It seems like you could be describing a settings issue. Have you changed the settings? Or tried resetting factory defaults? Or check your video card settings for conflicts?
Not sure it's the ultrawide bit that is the reason for crashing; it could be the typical 'game won't launch' steam shenanigans? What makes you think it's the resolution? As far as I can tell the game perfectly supports 21:9 now.
The only thing that changed from one day to the next, was that I bought this monitor. It was the same day that I tried to launch WH3 and that was when all this started :(
I have tried so many things, nothing has worked. At the moment I am doing yet another clean install (massive f'ing 100gb download AGAIN). I am attempting a trick someone on the forums mentioned about cleaning registries and starting over.
Windows wipe would be a last resort kind of thing for me. Too much crap on my computer, don't have the patience for all of that... yet.

Lol yeah, such a switch might not fix whatever exactly is the issue, nm 100% support for the res/ratio is still not consistent with every game (black borders etc are still a thing here and there)
Fwiw though, I absolutely love the pros of 3440x1440 to the point that while being able to run 4K (with a great TV for PC gaming) I stick with the 21:9 option even so.
It does take at least 12Gb VRAM (6700XT and up) imo to have a fair throw at it though, with 16Gb (6800XT in my case) being my baseline recommendation for ultra settings and 60+ fps.
I'm pretty much only going to step up from this when there's both more options and better prices for a higher 21:9 res (5120x2160?) and a reasonably affordable GPU to run it (well, I can dream anyway lol) Must admit I'm not so keen on 32:9 though... great for work etc but too much imo like peeking through a letterbox at native for games.
Anyway and again, hope you get the issue resolved ASAP.
