Radious, Sfo Grimhammer, ou Vanilla ?
What are the pros and c-ons of each, if someone has time to explain. ^^

Vanilla definitely tilts heavily towards the player so I wouldn't call it balanced at all.

SfO is great. Tons of "this should be vanilla"-moments. But if you look for crazy stuff check out radious. Definetely not vanilla at this point.

Radious overbloats the rosters. I dunno too much about SFO.

Personally I just use a bunch of mods, I don't prefer overhauls

I would say its a matter of preference. I only played sfo grimhammer so far and with its unit caps you can't do doomstacks as easily as you can in vanilla. Thats for AI and for the player, which I consider a nice thing (as I said preference in this case thats mine).
Also low tier units keep being relevant for longer.
Economy is reworked, so there are more ways to build up a province. Some buildings not only have positive effects but negative effects to so you have to balance stuff out. Thats probably something thats a tiny little bit more like the older TWs.
Also Grimhammer adds units to the game from lore. So different Lords of a certain race, culture or similar feels a bit more different.
Is it always balanced? Probably not, since there is a lot going on. Is it fun? Yes! For me at least. I even played the Tomb Kings twice (Arkhan and Khalida) since both get unique units and thus feel different even in campaign.

And one last point: Battles in Grimhammer are a bit slower in general. The take a bit longer since most units have more hitpoints and in some cases more or less models than before. Skaven feel like a real swarm since Skavenslaves run around with 280 men (or rats) on ultra unit size.
Battles like: Dwarves vs Skaven surely feel epic thanks to this, because Dwarfs often have small unit numbers, while Skaven come in these really big groups. Its a literal battle between Quality vs Quantity... at least until Skaven come with some weapon teams and beat the dwarfs with technology.

SFO adds a few unique units but nothing over the top like Radious.

Also SFO pretty much changes up almost all factions to be more unique and fun to play.

Vanilla, I don't enjoy such massive overhaul mods. Merely minor tweaks.

Depends. Many mods are already included. Read the description of SfO and of the mods you want to use and try around a bit. If it's nothing too invasive it shouldn't be a problem. I run quite a few mods alongside SfO and for now it works well :- )

when you have 2000 hours in warhammer total war series you need more of a challenge. SFO is great for veterans like me. even i struggle sometimes and i played like 1200 hours in game 2 with just SFO. plus it makes sieges better and sometimes gives better playstyles for bad factions

I dont use either, they either overtune stuff or overnerf stuff.

I just play Vanilla with a bunch of retexture mods and some mods that add Southern Realms or similar to the game.
