For dwarves probably nothing. Never recruit the gyrocopters though that's a doomed stack
Sisters stack, Dragon Stack, Lothern Seaguard stack. Eltharion get's his own doom stacks.
For the Dawi, it's usually Artillery Doomstacks. Organ Guns with a couple flame cannons and maybe a couple regular cannons to dual their artillery. Toss in 5 heroes to get the enemy to bunch up and your golden.
For Dwarfs an arty doomstack won't work well vs fast numerous enemies (or Skaven Menaces/Vermintides), your heroes won't be numerous enough and arty will be overrun, you'd better get at least some antilarge inf to cover flanks/rear
Not the most convenient, I didn’t try dwarfs in wh3 (yet), but could be good to put it to the test in wh3 as well…
Else i´s rate shades with great weapons as best ranged infantry units, because they have everything You´d want from a ranged unit. Good range, good armor piercing damage (i guess around 50 combined), stalk, armor piercing melee - and decent melee stats, which they usually don´t need, because You melt anything which comes close anyway, while artillery can´t fire on them, because of stalk. You can bring them into position and then start firing - if You don´t have artillery. Works in field battles and sieges.

Ironbreakers can probably be an auto-resolve doomstack - but they lack range and / or speed if You face enemy ranged units in manual battles. That´ll be the same problem with irondrakes. Their advantage is that they don´t need to get that close that the enemy will run away from them - but You would still need to close a gap - and they don´t have the silver shields. I guess the closest single unit which can do it are the bugman´s rangers, because of vanguard deployment, stalk, and self-healing, but they also lack speed, armor and armor piercing damage - while the latter shouldn´t be an issue if used in high numbers. They´re also faster than most heavy infantry, which could be a problem in melee - and they have charge defense vs. large.

Phoenix guard are backbone with sword masters on either side with sisters behind them. Watch as dragon fire and sister melt everything before they even get to you.

Position engineers so that half of the iron drakes, thunders and organ guns are on one side with the others with the other engineer on the other. This takes full advantage of the reload perk. I don’t think a single army in the game can get past this…

That not what you'd refer to as a doomstack, that's a normal army composition.
