Taurox (beastmen) with Minotaurs would also work.
Since it's your first time in WH3 I'll also add a word of caution: the bigger you go, the easier it will be for factions with a lot of missile units to focus on those monsters. And spear/halberd units will be able to tie them down pretty effectively. So just be on the lookout for ranged units, and try not to get too over zealous by attacking polearm units with them.
But above all, just have fun!
If you want dinosaurs, play lizardmen.
If you like undead monsters (and undead infantry too) play the vampire counts.
if you want werewolfs, trolls and mammoths, play norsca.
If you want to play with minotaurs and multiple versions of giants (ginat, cygors, gorgons) play beastmen.
Orcs also kinda work, with their multive versions of trolls, giant spiders and moving mountains (rogue Idols) but they are more infantry focused.
And, in theorie, ogres also count as large units. but they are just big humans, so don't know if that is what you want.

ogre kingdoms for entire armies of monstrous infantry
vamp counts/coast and greenskins technically have monstrous infantry but they have less of a focus on them than the rest imo
