Oxbow Barber/Surgeon
I spoke to Sedowin in the Oxbow, but none of his options allow me to edit my character, which I was told I could.

His options are;
1. I'd like to know more about this place.
2. What do you think about Castellan?
3. What is the Quartermaster like?
4. Tell me about yourself, Sedowin.
5. I'm in need of medical attention.
6. Farewell.

The fifth option looked like it may have been the one, but he tells me I'm overreacting, I've went through all of those options but nothing. I also have no quests for him either. I am playing solo, don't see why that would make a difference though. Any help?

You cannot change the appearance of your character yet. It's mentioned in the loading screen hints though, so I think the devs are planning to add it.
It probably didn't make it in time for the release of the co-op update.

Ah that makes sense, guess I'll just have to deal with the ponytail for now, thanks all the same.

It has been added by now.
In Oxbow you can change the appearance of your character (pretty similar to the options you get when you first create it, minus choosing the gender) at Sedowin. And even in the valley you can customize Racimir a bit at a new barber npc that will have appeared in Gostovia.
