Unfortunately, if you don't have a save from before anymore where the character is still there, it can't be recovered anymore and the person affected will have to make a new character. :(
It shouldn't happen anew with the newest 2.0.0.5 version though.
But in all honesty; I recommend saving under a new name regularly just to make you have a backup in case something goes wrong again.
I used HxD editor.
MAKE A BACKUP OF SAVEGAMES FOLDER
1. Find old save file where your friend still has a character and equipment (just open .sav file and ctrl+f and search for name of character that have been lost, if it’s there that means this is a good save file where your friends/friends still has everything)
2. open in HxD old save from previous step and latest one with progress and lost characters.
3. Find at the bottom name of the HOST character and copy everything from the name to end of the file (old save)
4. Paste everything you copied to latest save in the same place starting from HOST character name till the end of the file.
5. Save file with latest progress.
Equipment of every character will be loaded from the old save!!! BUT world progress is gonna be the latest from the latest save you edited. It’s the best I came up with.
We don't really recommend messing with the save files, as it can lead to unexpected errors later on. But in this case, it could maybe save someone hours of progress.
Use with caution though, and take a backup before changing the file.

Turns out the it wasn't the save file that was corrupted, (I figured out it was happening in ALL my save files even backed up ones from before I started messing with the beta, which was my clue). it was the game version files that got corrupted from going between versions. Uninstalling the game and re-downloading it fresh made my character come back. There is hope!
It should then have sets of SteamID + a game specific ID (I would assume) for every player/character on the server.
I made a new world/save and saved it onto a new save file, then went into that file and copied the new "game specific ID" and replaced the old ID on the previous save with the new ID that matched my SteamID.
