I'm certain somebody will correct me if I'm wrong, but that is the general rule of thumb.
It does seem to me that the more valuable animals seem to breed less. Maybe the % chance varies by species. It took several seasons for my mature male and female horses to produce their first offspring.
Other than that it's just bad luck. You using one as a mount makes no difference.

well I aint going to do all the calculations AGAIN.
anyway : to get annimal offspring you must meet 3 condintions.
**the annimals must be fed
**there must be at least 1 free bed in their building
**there must be at least 1 of both genders in their building.
if you meet these 3 demands, at the start of each new season a diceroll happens whether you will get annimal offspring.
for pigs, chickens, geese
each female has a 15% chance to get offspring per season PER MALE
pigs only have 5 beds so :
1 female, 1 man = 15% chance to get 1 piglet, 85% 0
1 female, 2 man = 30% chance to get 1, 70% 0
2 female, 1 man = 2,25% chance to get 2, 25,5% chance to get 1, 72,25% to get 0
3 female, 1 man = 38,5875% chance to get 1, 61,4125 chance to get 0
2 female, 2 man = 51% chance to get 1, 49% chance to get 0
1 female, 3 man = 45% chance to get 1, 55% chance to get 0
geese and chickens have 10 beds.. so higher numbers are possible... I was buisy giving numbers for ALL options.. but than steam delited my data... not going to do it again right now.. maybe later.. but if you have 7 male + 1 female, you guaranteed get a chick each season (7x15=105%) but the number of eggs you will get will be rather lousy.
horses & donkeys have only 4 beds, but have a 20% chance per female so for horses it is :
1 female, 1 man = 20% chance to get 1, 80% to get 0
2 female, 1 man = 36% chance to get 1, 64% to get 0
1 female, 2 man = 40% chance to get 1, 60% to get 0
no I was calculating all the chances for each variant of female and male chickens...
for example if 4 female and 2 male chickens, whats than the chance on 4, 3, 2, 1 and 0 chickens per season..
and that for ALL possible combinations... was nearly done (just 2 left) when steam delited what I had typed)
so
1 cow + 1 bull = 30% chance on 1 70% chance on 0
2 cow + 1 bull = 9% chance on 2, 42% chance on 1, 49% chance on 0
1 cow + 2 bull = 60% chance on 1, 40% chance on 0
3 cow + 1 bull = 2,7% chance on 3, 18,9% chance on 2, 44,1% chance on 1, 34,3% chance on 0
2 cow + 2 bull = 36% chance on 2, 48% chance on 1, 16% on 0
1 cow + 3 bull = 90% chance on 1, 10% on 0
4 cow + 1 bull = 8,37% chance on 3, 26,46% chance on 2, 41,16% on 1, 24,01% chance on 0

-> this will be essentially the expended calculation for chicken coop/goose house
already said, to frustated to do that much calculations right now.
but consider :
chickens/goose :
1 female +7 male = 100% chance on 1
(but low chance on eggs, thats why you want the calculations for that)
sheep/goat
2 female + 7 male = 100% chance on 2
(which is fine for sheep, but for goats, little milk)
All fine, they are well fed and pampered

Your workers will produce manure and eggs (if you have set that as a task in the building) from thin air, like all the work buildings where they gather material.
